- Raw mango – 1 kg
- Water- 3 to 4 glasses
- Jaggery – half kilo
- Salt- 2 tbsp
- Cinnamon- 1 tbsp
- Saffron – 4 to 5 threads
- Green cardamom – a little
- to temper
- Fennel, cumin, fenugreek, celery and nigella and mustard oil
How to make Mango Murabba
- First of all, peel the raw mango, cut it lengthwise and thickly and soak it in water for 24 hours.
- Next morning, pour water in a big pot and boil the chopped mangoes for 10 minutes.
- When you feel that the mangoes are slightly ripe, filter them and take them out.
- Now add jaggery powder or melted jaggery to it and keep it covered.
- After 15 to 20 minutes, turn the mango and jaggery mixture into the bowl.
- Now add cinnamon, saffron threads, and a little salt to it.
- When everything is mixed, heat the kahari for 5 to 7 minutes. Now add oil to make tadka in a big pan.
- When the oil becomes hot, add fennel, cumin, fenugreek, celery, and nigella seeds and fry. Add this tempering to mango jam and cook for 1 to 2 minutes.
