France, the country with the most Michelin stars in the world
France is once again the country with the most Michelin stars in the world, with a total of 630 restaurants with 763 stars in total, three more than in the previous edition. France has 29 3-star restaurants, 75 2-star restaurants, and 526 1-star restaurants. In addition, Paris is the second city in the world with the most Michelin stars.
In the latest edition of the Michelin Guide France 2023, the big news is the restaurant La Marine by chef Alexandre Couillon, a new three-starred restaurant. In addition, it is also news that the restaurants Guy Savoy and La Rochelle have lost their third star. The guide’s inspectors also awarded 4 new second stars and up to 39 new stars in this edition.
In the previous edition, France had exactly the same 763 stars among 627 restaurants (31 3-star restaurants, 74 2-star restaurants, and 522 1-star restaurants), so the number of stars it had remains the same, living up to its reputation as an essential gastronomic destination for lovers of good food.

Japan, the second country in the world with the most Michelin stars
In the latest edition of the French gastronomic guide, Japan has 528 stars spread across 414 restaurants, making it the second country in the world with the most Michelin stars after France. In the 2023 edition dedicated to restaurants in Japan, we find 21 3-star restaurants, 72 2-star restaurants and 321 1-star restaurants.
The 2023 editions of Tokyo and Kyoto-Osaka, which are published in Japan, did not present any new features in terms of three-star restaurants. However, there are up to four new features in two-star restaurants (Myojaku and Sézanne in Tokyo, Velrosier and Ryō-shō in Kyoto) and up to 19 restaurants with new stars: Amarantos, Ippei-hanten, Udatsu Sushi, Edomae Sushi Hanabusa, Elan, Sushi Oku, Ginza Kousui, Guchokuni, Gucci Osteria da Massimo Bottura Tokyo, Shigeyuki, Sushi Ichijyo, TOKi, Torakuro, NéMo, Restaurant Prunier, Yakumo Uezu, DODICI, Kenia and Enyuan Kobayashi.
Italy, the third country in the world with the most Michelin stars
Italy is in third place with 385 award-winning establishments and 447 stars in total. Italians have 12 3-star restaurants, 38 2-star restaurants, and 335 1-star restaurants.
In 2023, the Villa Crespi restaurant by chef Antonino Cannavacciuolo was awarded its third star, the only new addition in its category. Acquolina, Enoteca La Torre, St. George by Heinz Beck, and Locanda Sant’Uffizio are the 4 new restaurants with 2 Michelin stars.
